Prune Bran Muffins - cooking recipe
Ingredients

1 c. boiling water
3 c. 100% Bran, divided
2 1/2 c. flour
2 1/2 tsp. soda
1/2 tsp. salt
1/2 c. margarine
1 1/4 c. sugar
2 eggs
2 c. buttermilk
1 c. prunes, cut up
Preparation

Pour boiling water over 1 cup of bran; cool.
Combine flour, baking soda and salt; set aside.
Cream margarine, sugar and eggs. Stir in buttermilk, soaked bran, remaining bran, dry ingredients and prunes.
Mix well.
Pour in greased muffin tins.
Bake at 375\u00b0 for about 20 minutes.
Batter keeps well in refrigerator for several weeks.
