Zesty Italian Chicken - cooking recipe

Ingredients
    8 pieces chicken
    1 Tbsp. melted oleo
    1 (8 oz.) pkg. reduced calorie Italian salad dressing mix, divided
    2 medium zucchini, sliced 1/2-inch thick
    1 red pepper, cut into strips
    1/2 c. chicken broth
Preparation
    Preheat oven to 375\u00b0.
    Place chicken in roasting pan and brush with oleo.
    Sprinkle with 1 tablespoon salad dressing mix.
    Bake 15 minutes.
    Add vegetables and broth.
    Sprinkle with remaining salad dressing mix.
    Bake 25 minutes or until chicken is fork-tender.
