Potato "Cream Cheese" Casserole - cooking recipe
Ingredients

10 to 12 potatoes, cooked and mashed
1 (8 oz.) pkg. cream cheese
2 eggs, slightly beaten
2 Tbsp. fresh onion, chopped
2 Tbsp. chives, chopped
2 Tbsp. parsley, chopped
1 tsp. salt (to taste)
white pepper (if desired)
1 can French fried onion rings
Preparation

Combine mashed potatoes and cheese.
Beat until well blended. Add eggs, fresh onion, chives, parsley, salt and pepper.
Spoon into a well-greased casserole dish. Top with canned onion rings. Bake at 375\u00b0 for 30 minutes or until heated through.
