Diet Fruit Cake - cooking recipe
Ingredients

1 c. seedless raisins
1 c. chopped pecans
1 c. cranberries, coarsely chopped
1 c. pineapple chunks (if big, cut in half)
1 Tbsp. grated orange rind
1 Tbsp. grated lemon rind
3 Tbsp. artificial sweetener
1/2 c. orange juice
2 Tbsp. melted margarine
1 1/2 c. sifted flour
1 tsp. baking powder
1/2 tsp. salt
1/4 tsp. cinnamon
1/4 tsp. allspice
1/4 tsp. nutmeg
Preparation

Preheat oven to 350\u00b0.
Put artificial sweetener in orange juice; pour over cranberries.
Let set 1 hour.
Combine raisins, pecans, cranberries, pineapple chunks, orange rind and lemon rind. Add melted margarine.
Sift and measure flour. Add salt, soda and spices to flour and sift.
Put in muffin cups and bake 35 minutes.
