"Cajun" Black Beans - cooking recipe
Ingredients

1 lb. dry black beans
1 large bell pepper
1 c. chopped onion
1 1/2 c. cubed ham
1 tsp. salt
1/2 tsp. black pepper
1 small pkg. saffron rice
Preparation

Soak beans overnight in enough water to cover.
Cube ham.
Chop onion and pepper.
Braise pepper, onion and ham in small amount of corn oil.
Place beans in cooker and cover with water, seasoning and the braised mixture of ham, onion and pepper.
Cook until beans are tender.
