Ingredients

1 Tbsp. cornstarch
1/2 tsp. salt
1/2 c. mild vinegar or 6 Tbsp. vinegar and 1/4 c. cream
3 c. cooked sliced beets
1/2 c. sugar
2 Tbsp. butter
Preparation

Cook and stir the first 4 ingredients in the top of a double boiler.
When clear, add the beets and place the pan, covered, over hot water for 1/2 hour.
Just before serving, heat the beets again and add the butter.
Makes 6 servings.
