Festive Pork Roast - cooking recipe

Ingredients
    2 lb. boneless pork loin roast
    2 large cloves garlic, pressed
    3/4 c. golden raisins
    1 sprig fresh rosemary (4-inch long)
    1 3/4 c. canned pineapple juice
    3 Tbsp. currant jelly
    1 Tbsp. minced, crystallized ginger
    1 Tbsp. cornstarch
    sliced pineapple for garnish
Preparation
    Cut a slit lengthwise through center of pork, not all the way through.
    Lay flat.
    Rub with garlic, salt and pepper to taste; sprinkle with raisins.
    Close roast and tie with string.
    Place rosemary on top.
    Wrap roast with heavy duty foil.
    Poke several small holes through foil into pork on all sides.
    Place in roasting pan.
    Roast in 350\u00b0 oven 1 to 1 1/4 hours.
