Citrus Spinach Salad - cooking recipe

Ingredients
    2 Tbsp. orange juice
    2 Tbsp. rice vinegar
    1 Tbsp. vegetable oil
    1 Tbsp. honey
    1/4 tsp. grated orange rind
    6 c. torn spinach
    2 oranges, peeled, seeded and sectioned
    1 small purple onion, sliced and separated into rings
    1 Tbsp. pine nuts, toasted
Preparation
    Combine first 5 ingredients in a jar.
    Cover tightly and shake vigorously.
    Chill thoroughly.
    Combine spinach, orange sections and onion rings in a salad bowl.
    Drizzle dressing over spinach mixture.
    Toss gently.
    Sprinkle with pine nuts before serving.
