Potato-Vegetable Saute - cooking recipe

Ingredients
    2 tsp. vegetable oil
    2 Tbsp. diced onion
    1/2 garlic clove, minced
    6 oz. peeled, cooked potatoes, cut into cubes
    1/2 c. each: cubed red and green bell peppers (1/2-inch cubes)
    dash each salt and pepper
Preparation
    In an 8 or 9-inch skillet, heat oil; add onion and garlic and saute until onion is soft.
    Add potatoes and bell peppers; saute, stirring until potatoes are lightly browned and peppers are tender-crisp.
    Stir in salt and pepper and saute for 2 minutes longer.
    Makes 2 servings.
