Carrot Cake - cooking recipe
Ingredients

1 1/2 c. all-purpose flour
1 1/2 c. granulated sugar
1 tsp. baking powder
1/2 tsp. cinnamon
1/2 tsp. ginger
1/2 tsp. nutmeg
1 c. cooked mashed carrots, at room temperature
3/4 c. vegetable oil
1 (8 1/4 oz.) can crushed pineapple, drained
3 eggs
1 Tbsp. hot water
1/2 c. chopped walnuts
1/4 c. raisins
8 oz. cream cheese, softened
1/2 c. butter, softened
1 lb. powdered sugar
Preparation

Beat cream cheese and butter until fluffy.
Gradually add sugar to desired consistency.
For eight people.
Yields one 9-inch cake.
