French Potato Balls - cooking recipe

Ingredients
    4 medium potatoes, peeled, sliced and cooked
    3 Tbsp. mayonnaise
    1 tsp. Dijon mustard
    1 clove garlic, crushed
    1 Tbsp. chopped fresh parsley
    2 eggs, beaten with 1/4 c. water
    1 1/2 to 2 c. dried bread crumbs
    1 Tbsp. chopped chives
Preparation
    Mash potatoes with mayonnaise, mustard, garlic, parsley, chives, salt, pepper and sufficient flour to make firm dough. Roll into balls. Dip in egg mixture, then roll in bread crumbs. Refrigerate for 1 hour.
    Deep fry in oil until brown.
