Pozole - cooking recipe
Ingredients

2 lb. pork roast, boned, cubed and fat removed
2 lb. chicken, cut up
3 qt. water
2 large onions, chopped
2 cloves garlic, crushed
2 or more Tbsp. chili powder
1 bunch fresh parsley, chopped
1 or 2 cans chopped chillies
1 (1 lb.) can chopped tomatoes
1 1/2 Tbsp. sugar
2 (1 lb.) cans white hominy
salt and pepper to taste
Preparation

Put the first 10 ingredients in a large kettle; bring to a boil.
Turn heat to low; simmer gently, covered, for at least 1 hour, or until pork and chicken are tender.
Add hominy; cook 15 minutes longer.
Garnish with avocado slices, chopped green onions, grated Monterey Jack cheese or tortilla chips.
