Westport Room Salad - cooking recipe

Ingredients
    1 clove crushed garlic or 1/4 tsp. minced garlic
    1 to 3 Tbsp. fat free Parmesan cheese
    1 c. fat free Kraft mayonnaise or Miracle Whip
    2 Tbsp. lemon juice
    1/2 head cauliflower
    1/2 head lettuce
    1 bunch fresh spinach, cleaned and torn into bite size pieces
    1 c. Pepperidge Farm seasoned stuffing cubes
Preparation
    Blend all ingredients together except cauliflower, lettuce and spinach.
    Refrigerate for at least 1 hour.
    Grate half a head of cauliflower and refrigerate, covered.
    Pour dressing over bite size pieces of lettuce and spinach.
    Sprinkle grated cauliflower over top and toss.
    Top with stuffing cubes.
