Venison Pepper Steak - cooking recipe

Ingredients
    peppercorns
    1-inch thick venison steaks
    butter or margarine
    1 c. beef broth
    1/2 c. heavy cream
    3 oz. brandy
Preparation
    Grind peppercorns in a pepper mill or crush them in a paper bag with a rolling pin or hammer.
    Rub the steaks with butter or margarine and sprinkle each liberally with crushed peppercorns. Rub the pepper in with a knife and let stand at room temperature for 1 hour.
    Sear the steaks in very hot butter or margarine in a skillet for about 1 minute on each side.
    Remove to a hot platter. Pour the beef broth, cream and brandy into the pan and stir over high heat for 3 minutes.
    Pour this over the steaks.
