Welsh Tea Cakes - cooking recipe
Ingredients

3 1/2 c. flour
1 c. sugar
1 c. shortening
1 egg, beaten
3/4 c. milk
1 1/4 c. currants
1 tsp. salt
1 1/2 tsp. baking powder
1/2 tsp. baking soda
Preparation

Scald currants to soften and drain.
Mix dry ingredients in a large bowl.
Cut in shortening until mixture is mealy.
Add egg, milk and currants.
Mix until all ingredients are moist and dough holds together.
Roll out on floured board to 1/4-inch thickness. Cut with cookie cutter.
Heat griddle or electric frypan (about 350\u00b0 to 375\u00b0).
Grease lightly.
Place cookies on griddle.
When brown on bottom, turn and brown other side.
After removing from griddle, sprinkle with sugar.
