Red Beans And Rice - cooking recipe
Ingredients

1 lb. smoked sausage, sliced into 1/2-inch slices
1 large onion, chopped
1 large green pepper, chopped
1 clove garlic, minced
2 large cans red kidney beans, drained
1 (16 oz.) can stewed tomatoes
1/2 tsp. dried oregano
1/2 tsp. pepper
hot cooked rice
Preparation

Cook sausage over low heat.
Add onion, green pepper and garlic. Saute until tender. Add red beans, tomatoes and seasonings. Simmer for 20 minutes.
Serve over hot rice.
Great served with corn bread.
