Cake For Diabetics - cooking recipe

Ingredients
    2 c. raisins or 1 can unsweetened fruit cocktail, drained
    2 c. cake flour
    2 eggs
    3/4 c. cooking oil
    1 1/2 tsp. cinnamon
    1/2 tsp. nutmeg
    1 1/4 tsp. baking soda
    1 can unsweetened applesauce
    1 tsp. vanilla flavoring
    2 Tbsp. liquid sweetener
Preparation
    Cook raisins with small amount of water until all liquid is gone.
    Blend or mash up.
    Combine all ingredients and bake in greased and floured 10-inch tube pan.
    Bake at 350\u00b0 for 1 to 1 1/4 hours or until tester comes out clean.
