Green Chili Stew - cooking recipe

Ingredients
    1 1/2 lb. pork tenderloin or chicken
    2 tsp. ground red chili
    2 tsp. ground cumin
    1 Tbsp. oregano
    2 tsp. oil
    1 c. chopped onion
    1 Tbsp. minced garlic
    3 c. chicken stock or chicken broth
    1 bay leaf
    1/4 c. pickled jalapenos, chopped
    1/2 lb. Anaheim green chilies (about 4), chopped and peeled
    1 lb. red skinned potatoes, cubed
    2 c. sliced carrots
Preparation
    Cut meat into 3-inch chunks and rub with chili, cumin and oregano.
    Heat oil in 5-quart pot and brown meat.
    Remove meat and saute onion.
    Stir in garlic, stock and bay leaf.
    Put meat back in and simmer 30 minutes.
