Middle East Eggplant Salad - cooking recipe
Ingredients

1 large eggplant
2 tomatoes, diced
1/2 onion, chopped
4 Tbsp. fresh parsley, chopped
2 to 3 Tbsp. oil
white vinegar or lemon juice
salt
pepper
Preparation
-
Cook eggplant ahead of time in oven or grill (turning it often so it cooks evenly) until very tender.
(It will look mushy.)
Let it cool down.
Peel and dice (skin should peel off easily).
Mix all ingredients together.
Mix well.
