Turkey Tetrazzini - cooking recipe
Ingredients

3/4 lb. mushrooms, sliced
1 small green pepper, slivered
1/4 c. butter or margarine
3 Tbsp. flour
2 tsp. salt
1/4 tsp. pepper
2 1/2 c. light cream
4 c. diced, cooked turkey
2 pimientos, chopped
2 Tbsp. sherry
6 oz. fine spaghetti, cooked
2 egg yolks, beaten
grated Parmesan cheese
Preparation

Cook mushrooms and green pepper in butter for 5 minutes. Blend in flour and seasonings.
Add cream and cook, stirring, until thickened.
Add turkey, pimiento and sherry.
Heat.
Divide spaghetti into 6 broiler-safe individual baking dishes or put into 1 shallow baking dish.
Add a small amount of turkey mixture to egg yolks; then stir in remaining mixture.
Pour over spaghetti and sprinkle with cheese.
Bake at 300\u00b0 for about 45 minutes.
Put under broiler to brown lightly.
Serves 6.
