Sweet Pickle Strips - cooking recipe

Ingredients
    2 gal. large cucumbers
    1 gal. water
    1 c. lime
    3 1/2 pt. vinegar
    5 lb. sugar
    1 Tbsp. salt
    2 Tbsp. mixed pickle spices
Preparation
    Use large cucumbers; peel, remove seeds and cut into long strips.
    Mix water and lime.
    Soak cucumber strips in mixture for 24 hours in refrigerator.
    Wash several times; soak in ice water for about 2 hours.
    Drain well.
    Cook vinegar, sugar, salt and spices for 20 minutes.
    Pour over cucumbers strips; let soak overnight.
    Cook for 30 minutes; pack in jars.
    A little red, green or yellow food coloring may be added.
