Fresh Potato Rolls - cooking recipe
Ingredients

1 pkg. dry yeast
2/3 c. scalded milk
1/2 c. shortening
1 c. fresh hot mashed potatoes
1/4 c. sugar
3 large eggs, lightly beaten
2 tsp. salt
6 1/2 c. sifted flour (about)
3 Tbsp. melted butter
Preparation

Sprinkle yeast over 1/2 cup warm water.
Stir until dissolved.
Combine the milk, shortening, potatoes, sugar and salt in large bowl.
Add 1 1/2 cups flour; mix well.
Cover; let rise for 1 hour.
Stir in enough flour to make stiff dough.
Knead on lightly floured board.
Knead until smooth.
Place in greased bowl, turning to grease top.
Cover; refrigerate.
Shape into balls.
Grease in butter.
Let rise for 1 hour and 15 minutes. Bake at 425\u00b0 for 20 minutes.
