Curried Black-Eyed Peas - cooking recipe

Ingredients
    2 Tbsp. plus 2 tsp. reduced calorie margarine
    1 c. thinly sliced onion
    2 tsp. chopped fresh ginger root
    1/2 tsp. curry powder
    1/4 tsp. coriander seed or powder
    1/8 tsp. ground cumin
    8 oz. frozen or drained black-eyed peas
    1/4 c. plain low-fat yogurt
Preparation
    In
    medium nonstick skillet, melt margarine.
    Add onion and ginger and cook, stirring frequently, until golden.
    Stir in coriander,
    curry
    and cumin; cook 5 minutes.
    Add peas and 1/2 cup water;
    cook 2 to 3 minutes until liquid is reduced by half. Can
    be
    served
    warm
    or
    cold.
    Top
    with teaspoon of low-fat yogurt.
