Meatball Casserole - cooking recipe
Ingredients

1 lb. ground beef
1/2 c. fresh bread crumbs
1 egg
1 tsp. salt
2 c. water
1 c. uncooked rice
2 large carrots, sliced
1/2 c. green pepper, chopped
1/4 c. onion, diced
1/2 lb. Velveeta cheese
Preparation

Combine meat, bread crumbs, egg and salt.
Shape into about 18 meatballs.
Brown in skillet or oven.
Drain.
In Dutch oven or deep skillet, combine browned meatballs, water, rice, carrots, green pepper and onion.
Cover and simmer about 25 minutes or until vegetables are cooked.
Add cheese and heat until melted. Makes 4 to 6 servings.
