Mexicali Eggplant - cooking recipe
Ingredients

1 lb. ground beef
4 slices bacon, cut in 1/2-inch slices
1/2 c. chopped onion
1/2 c. green pepper, chopped
1 clove garlic, minced
1 medium eggplant, cut into 1/2-inch cubes (6 to 8 c.)
16 oz. can tomato sauce
1/2 tsp. pepper
1 c. shredded Mozzarella cheese

Microwave ground beef at Full power until beef loses pink color (5 to 15 minutes); drain and set aside.
