Madrisciana (Italian Tomato Sauce With Bacon) - cooking recipe

Ingredients
    1/2 c. blended olive oil
    1/4 green pepper, diced
    2 medium onions, diced
    1/2 head (large) garlic, minced
    9 c. plum tomatoes, diced (fresh or canned)
    salt and pepper to taste
    1/2 c. sweet basil, chopped or 1 Tbsp. dried
    1/2 c. parsley, chopped or 1 Tbsp. dried
    1 lb. bacon, browned until crisp, cooled and crumbled
Preparation
    In a large skillet, saute blended olive oil with green pepper and onions.
    Add garlic; heat until golden brown.
    Add tomatoes, salt, pepper, basil and parsley.
    Stir and simmer, uncovered, for approximately 1 hour.
    Add crumbled bacon to finished sauce just before serving.
    Serves 5 to 6 adults as main course.
