Butter-Crumb Corn Patties - cooking recipe

Ingredients
    2 c. drained whole kernel corn
    3 eggs, well beaten
    1 c. shredded Cheddar cheese
    2 Tbsp. finely chopped onion
    1 tsp. salt
    dash of pepper
    1 c. dry bread crumbs, finely crushed
    butter for browning
Preparation
    Combine all ingredients, reserving 1/2 cup bread crumbs. Shape into patties using 1/4 cup of the mixture for each. Sprinkle both sides of patties with reserved crumbs.
    Quick-freeze on cookie sheet.
    Wrap for freeze storage.
    To serve, fry frozen patties in butter until golden brown, turning once.
    Serve hot. Makes 10 to 12 patties.
