Microwave And Oven Stuffed Potatoes - cooking recipe

Ingredients
    4 large baking potatoes
    16 oz. low-fat 1% cottage cheese
    1 c. diced ham
    1 c. shredded low-fat Cheddar cheese
    1/2 c. chopped green onions
    1/2 tsp. salt
    1/8 tsp. ground pepper
Preparation
    Prick potatoes all over with fork.
    Arrange in microwave dish and microwave on High for 15 to 18 minutes, turning halfway through until tender.
    Preheat oven to 400\u00b0.
    Halve potatoes and scoop out insides.
    Leave 1/4-inch shell.
    Mash cooked potatoes with cottage cheese in bowl.
    Stir in ham, Cheddar, onions, salt and pepper.
    Spoon mixture into shells.
    Bake 20 minutes.
    Makes 4 servings.
