Baked Squash Casserole - cooking recipe
Ingredients

3 lb. yellow squash
1/2 c. chopped onion
1/2 saltine cracker crumbs
1/2 tsp. pepper
1 tsp. salt
2 eggs, beaten
1 Tbsp. sugar
1 stick butter or margarine, melted
1 small jar pimentos, diced
Preparation

Cut up squash and boil in small amount of water until tender. Drain thoroughly, then mash.
Add all ingredients, except 1/2 of butter. Salt and pepper may be adjusted to taste.
Pour squash in a shallow lightly greased baking dish. Pour melted butter over top and sprinkle with additional crushed saltines, if desired. Bake at 350\u00b0 for about 1 hour or until browned on top, depending on size of pan it may be done earlier.
Start checking at about 30 minutes.
