Prize Winning Cauliflower Supreme - cooking recipe

Ingredients
    1/2 c. plus 4 Tbsp. seasoned dry bread crumbs, divided
    1 head cauliflower, cut into flowerets
    water
    2 eggs, beaten
    1/2 c. plus 2 Tbsp. grated Parmesan cheese, divided
    1 (8 oz.) pkg. Mozzarella, diced
    1 (15 oz.) Ricotta cheese
    2 oz. hard salami, diced
    ground pepper to taste
    1/2 tsp. salt or to taste
Preparation
    Preheat oven to 350\u00b0.
    Grease 12 x 8-inch baking dish. Sprinkle lightly with 1/2 cup bread crumbs.
    In large saucepan over medium-high heat, bring cauliflowerets and enough water to a boil.
    Cook 10 minutes or until tender.
    Drain; with fork crush cauliflower into smaller pieces; do not puree.
    In large bowl combine cauliflower, eggs, 1/2 cup Parmesan cheese, Mozzarella, Ricotta, salami and 2 tablespoons bread crumbs for topping.
    Add salt and pepper.
    Pour into prepared dish.
    Sprinkle with remaining Parmesan cheese and bread crumbs.
    Cover with foil and bake 30 minutes.
    Remove foil; bake 20 to 30 minutes longer or until browned.
    Serve hot.
    Makes 6 to 8 servings.
