Grilled Caribbean Chicken - cooking recipe
Ingredients

2 boneless, skinless chicken breasts, split
2 c. mango, cubed
1/4 c. chopped cilantro or parsley
2 Tbsp. chopped green onion
3 Tbsp. lime juice
1 1/2 tsp. brown sugar
1/2 c. cucumber, cubed
1/2 jalapeno, peeled, seeded and chopped
1 tsp. fresh ginger
Preparation

Combine mango, cucumber, cilantro, onion, pepper, lime juice, sugar and ginger.
Cover and refrigerate at least 1 hour to blend flavors.
Grill chicken breasts until done.
Top with salsa. (Low-fat.)
