Strawberry Honey Butter - cooking recipe

Ingredients
    1 pt. strawberries, hulled and washed
    3 Tbsp. honey
    2 tsp. fresh lemon juice or to taste
    1 1/2 sticks unsalted butter, softened
Preparation
    In a food processor, puree strawberries; force the puree through a fine sieve into a saucepan; add honey and lemon juice. Boil mixture, stirring constantly, for 3 minutes or until thickened.
    Cool to room temperature.
    In a bowl, cream together the butter and strawberry mix.
    Let mixture stand for 1 hour, covered, in a cool place so that flavors can mix and develop. Serve with croissants or toast.
