Tourlou (Greek Vegetables) - cooking recipe

Ingredients
    1 large eggplant, cubed
    3 large green peppers, cut in strips
    3 large zucchini, cut in large pieces
    3 large onions, thinly sliced
    1 c. chopped parsley
    1 (16 oz.) can whole tomatoes, chopped or pureed
    1 (8 oz.) can tomato sauce
    1/2 c. olive oil
    salt and pepper to taste
Preparation
    Combine and spread first 7 ingredients in 16 x 13-inch pan. Pour olive oil over all.
    Add salt and pepper.
    Bake at 350\u00b0 for 1 hour (covered with lid or foil).
    After 1 hour, stir.
    Reduce heat to 300\u00b0.
    Bake 1 hour longer, or until fairly thick.
    Serve hot or cold.
    May be frozen.
    Serves 10 to 12.
