Mom'S Lemon Pie - cooking recipe
Ingredients

7 Tbsp. cornstarch
1 1/2 c. sugar
1/2 tsp. salt
2 Tbsp. butter or margarine
1 Tbsp. grated lemon peel
2 c. boiling water
3 eggs, separated
1/4 c. lemon juice
1 pkg. Pillsbury pie crust or make your own
Preparation

Use double boiler.
Combine cornstarch, sugar and salt.
Add water; cook until thick, stirring constantly.
Cover and place over boiling water 10 minutes, stirring occasionally.
Beat egg yolks slightly.
Add a little hot mixture; stir.
Pour back.
Cook 2 minutes, stirring constantly.
Remove from heat; stir in lemon juice, butter and grated peel.
Cool at room temperature; do not stir.
Pour into cooled, baked pastry shell.
