Vegetable Casserole - cooking recipe
Ingredients

4 oz. zucchini
4 oz. yellow squash
3 cherry tomatoes
2 oz. celery
2 oz. button mushrooms
4 oz. broccoli
3 oz. Monterey Jack cheese, sliced thin
4 oz. sharp Cheddar cheese, sliced thin
1 c. rice pilaf, cooked
6 oz. green chili salsa
handful sunflower seeds
Preparation

Steam all vegetables until just cooked, about 8 minutes.
Place 1 cup rice pilaf on the bottom of a 2-quart casserole dish.
Put all vegetables on the bed of rice and pour salsa over vegetables. Place thinly sliced cheeses on top to cover.
Sprinkle sunflower seeds on top of cheese.
Place in microwave for approximately 5 minutes, until cheese is melted.
For conventional oven, preheat to 375\u00b0.
Bake in oven until cheese is thoroughly melted.
