Roger'S Bean Soup - cooking recipe

Ingredients
    1 lb. navy beans or small white beans
    1 ham hock
    1 diced small bell pepper
    2 diced onions
    3 diced potatoes
    1 (1 lb.) can tomatoes
    1 Tbsp. salt
    1 tsp. pepper
Preparation
    Use a 6-quart pot.
    Place beans, ham hock, salt and pepper in pot and add plenty of water.
    Simmer, stirring occasionally, 2 1/2 to 3 hours.
    Add diced vegetables and tomatoes and fill pot with water to 6 quarts; stir well.
    Simmer, stirring once during the next hour.
    Let stand a couple of hours before stirring.
    Reheat. Makes 6 quarts, enough for 4 hungry eaters or a dozen dieting women.
    Serve with tossed salad and garlic bread.
