Mexican Corn Bread - cooking recipe

Ingredients
    1 c. corn meal
    1 c. buttermilk
    2 eggs
    1/4 c. bacon drippings
    3/4 tsp. soda
    1/2 tsp. salt (optional)
    1 medium onion, chopped
    1 1/2 jalapeno peppers (optional)
    1/2 can cream-style corn (3/4 is better)
    1/2 lb. grated cheese (3/4 is better)
Preparation
    Mix all, except cheese.
    Pour 1/2 in large iron skillet that has been greased and heated.
    Sprinkle 1/2 cheese over it, then add rest of batter.
    Sprinkle rest of cheese on top.
    Bake as corn bread in a 400\u00b0 oven until brown.
