Ripe Yellow Cucumber Pickles - cooking recipe

Ingredients
    2 c. white vinegar
    1 c. water
    1 c. sugar
    1/2 tsp. mustard seed
    1 tsp. mixed spices
Preparation
    Select melons with thick rinds.
    Peel off all green portion. Dice.
    Soak in mild salt water overnight (1/2 cup salt to 1 gallon water).
    Drain.
    Cook in clear water about 30 minutes until tender.
    Drain.
    For 4 pounds rind, make a syrup of 9 cups sugar, 8 cups water, 4 lemons, 4 sticks cinnamon and 4 teaspoon cloves (spices in cheesecloth).
    Boil syrup, lemon and spices
    5 minutes before adding rind.
    Cook until rinds are transparent.
    Can add food coloring (red, green, yellow, etc.)
    Remove spice bag.
    Seal.
