Chicken Fricassee - cooking recipe

Ingredients
    1 large fryer, cut up
    1/2 c. melted shortening
    flour
    salt and pepper
    1 (16 oz.) can tomatoes
    1 (16 oz.) can English peas
    2 large onions, sliced
Preparation
    Mix flour, salt and pepper.
    Dredge chicken in mixture.
    Brown on all sides in hot shortening.
    Remove chicken.
    Pour off all but 2 tablespoons fat.
    Saute onions until translucent.
    Add tomatoes and English peas.
    Salt to taste.
    Add chicken and cover.
    Bake at 325\u00b0 for 1 hour or until chicken is fork-tender.
