Pineapple-Poached Carrots - cooking recipe
Ingredients

2 c. julienned carrots
3/4 tsp. cinnamon
freshly ground pepper to taste
6 oz. pineapple juice
dash of nutmeg (optional)
Preparation

In a saucepan, combine all ingredients.
Bring to a boil. Reduce heat, cover and simmer until carrots are tender-crisp, about 10 minutes.
Makes 3 servings.
