Zucchini Muffins - cooking recipe
Ingredients

3 eggs
1 c. vegetable oil
2 c. grated unpeeled zucchini
2 tsp. vanilla
2 1/2 c. plain flour
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1 to 2 tsp. allspice
1 to 2 tsp. cinnamon
2 c. sugar
1/2 c. chopped nuts
1/2 c. raisins
Preparation

Grease and flour muffin pan.
Beat eggs until thick and fluffy.
Gradually add oil.
Add zucchini and vanilla.
In a separate bowl, mix together flour, baking powder, baking soda, salt, allspice, cinnamon, sugar, nuts and raisins.
Add zucchini mixture.
Pour into muffin pan.
Bake at 325\u00b0 for 25 to 30 minutes.
