Frozen Waldorf Salad - cooking recipe

Ingredients
    2 eggs, lightly beaten
    1/2 c. sugar
    1/4 c. pineapple juice
    1/4 c. lemon juice
    1/8 tsp. salt
    cornstarch (optional)
    1/2 c. diced celery
    1/2 c. drained crushed pineapple
    2 medium apples, diced
    1/2 c. pecans, chopped
    1 c. whipping cream, whipped
    cherries (to garnish)
Preparation
    Combine eggs, sugar, pineapple juice, lemon juice and salt. Cook until thick over low heat, stirring constantly.
    (You may add cornstarch, if necessary.)
    Cool.
    Important to cool.
    Add celery, pineapple, apples and nuts.
    Gently fold in whipped cream. Spoon into 8-inch square pan and freeze.
    To serve, cut into squares and garnish with cherries.
    Serves 8 to 10.
