Eggplant Casserole - cooking recipe

Ingredients
    1 large eggplant
    1 1/2 c. grated cheese
    2 eggs
    1/2 tsp. salt
    1 Tbsp. butter
    3/4 c. milk
    12 saltine crackers, crumbled (Ritz)
Preparation
    Peel eggplant, slice and cook in salted water until tender; drain.
    Mash eggplant.
    Add 1 cup cheese and butter.
    Let melt. In 1 1/2-quart baking dish, mix crackers, milk, eggs and salt. Add eggplant mixture and mix well.
    Sprinkle rest of cheese on top.
    Bake at 400\u00b0 for 30 minutes.
