Williamsburg'S Chownings Tavern Brunswick Stew - cooking recipe

Ingredients
    6 lb. stewing hen or 2 to 3 lb. chicken fryers
    2 large onions, sliced
    2 c. okra, cut (optional)
    4 c. tomatoes
    2 c. lima beans
    3 medium potatoes, diced
    4 c. corn, cut or 2 lb.
    3 tsp. salt
    1 tsp. pepper
    1 Tbsp. sugar
Preparation
    Cut chicken in pieces and simmer in 3 quarts water (thin stew) or 2 quarts (thick), until meat is easily removed from bones, about 2 1/4 hours.
    Add raw vegetables to broth and simmer, uncovered, until beans and potatoes are tender.
    Stir to prevent scorching. Add chicken, boned and sliced and seasonings.
    Cook long and slow. Flavor improves when reheated the next day.
