Leeann Chin'S Mandarin Pork - cooking recipe

Ingredients
    1 1/4 lb. boneless pork loin
    1 Tbsp. oil
    2 tsp. cornstarch
    1 tsp. salt
    1 tsp. soy sauce
    1/2 tsp. sugar
    1/4 tsp. white pepper
    2 green onions
    1 green pepper (large)
    1/4 c. oil
    1 tsp. chopped ginger root
    1 tsp. chopped garlic
    8 1/2 oz. sliced bamboo shoots
    3/4 c. carrots
    1 Tbsp. soy sauce
    2 tsp. chili paste or 1 tsp. dried chili pepper and 1 Tbsp. soy sauce
Preparation
    Trim fat from pork.
    Cut pork into matchsticks (1/8 x 2-inch slices).
    Toss pork, 1 tablespoon oil, cornstarch, salt, 1 teaspoon soy sauce, sugar and white pepper in glass or plastic bowl.
    Cover and refrigerate 30 minutes.
    Cut green onions into 2-inch pieces. Cut green pepper, carrots, and bamboo shoots into 1/8-inch strips. Heat wok until 1 or 2 drops of water bubble and skitter when sprinkled in wok.
    Add 1/4 cup oil; rotate wok to coat side.
    Add pork, ginger root and garlic; stir-fry until pork is no longer pink.
    Add green pepper, bamboo shoots and carrots; stir-fry 1 minute.
    Stir in green onions, 1 tablespoon soy sauce and chili paste.
    Makes 5 servings.
