Rice Pudding - cooking recipe

Ingredients
    1 c. raw rice
    1 c. coconut milk
    1 c. milk
    1/2 c. water or more
    pinch of salt
    1/4 c. granulated sugar
    1/4 tsp. nutmeg
    1/4 tsp. cinnamon
    1/3 c. chopped almonds
    1/2 tsp. vanilla
    raisins (optional)
Preparation
    Bring water, salt and coconut milk to the boil.
    Add rice and continue to cook on medium heat until rice is almost soft; stir occasionally.
    Add milk, sugar, nutmeg, cinnamon, almonds and vanilla and continue to cook on medium heat.
    Stir often until liquid is absorbed and rice is cooked and soft.
    Serve hot or cold in individual dishes with a teaspoon of jam or jelly on top.
