Surprise Muffins - cooking recipe

Ingredients
    2 c. flour
    1/4 c. sugar
    3 tsp. baking powder
    1 tsp. salt
    1 egg
    1 c. milk
    1/4 c. vegetable oil
    jelly of your choice
Preparation
    Stir together in a bowl the flour, sugar, baking powder and salt.
    Make a well in center of the flour mixture.
    In another bowl, beat eggs; stir in milk and oil.
    Pour egg mixture into flour mixture. Stir just until flour is moistened.
    Batter will be slightly lumpy. Do not overmix.
    Fill muffin cups 1/2 full of batter.
    Drop a little jelly in center of batter.
    Add more batter to fill muffin cups 2/3 full. Bake at 400\u00b0 for 20 to 25 minutes or until golden brown.
    Makes 12 muffins.
