Cranberry Pecan Muffins - cooking recipe
Ingredients

1 1/2 c. coarsely chopped fresh cranberries
1/4 c. sugar
3 c. flour
1 c. sugar
4 1/2 tsp. baking powder
1/2 c. shortening
1 c. chopped pecans
2 eggs
1 c. milk
Preparation

Combine cranberries and 1/4 cup sugar, set aside.
Combine flour, cup of sugar and baking powder, mix well.
Cut in shortening with pastry blender until mixture resembles coarse meal.
This can be done in food processor.
Stir in pecans.
In separate bowl, beat eggs.
Stir in milk. Add to dry ingredients, stirring only until moistened.
Gently stir in cranberry mixture. Spoon batter in muffin tin.
Bake at 400\u00b0 for 12 minutes.
Yield: 24 cupcakes.
