Vegetarian Lasagna - cooking recipe

Ingredients
    10 lasagna noodles
    2 (10 oz.) pkg. frozen chopped spinach
    1/2 c. chopped onion
    1 Tbsp. oil
    1 c. grated raw carrots
    2 c. sliced fresh mushrooms
    1 (15 oz.) can tomato sauce
    1 (6 oz.) can tomato paste
    1/2 c. chopped, pitted ripe olives
    1 1/2 tsp. dried oregano
    2 c. cottage cheese
    1 lb. Mozzarella cheese, grated
    1/4 c. grated Parmesan cheese
Preparation
    Boil noodles until done (approximately 8 to 10 minutes). Prepare spinach according to package directions (or simply defrost ahead of time).
    Saute onion in oil until soft.
    Add carrots and mushrooms.
    Cook until crisp and tender.
    Stir in tomato sauce, paste, olives and oregano.
