Ingredients

1 c. unbleached flour
2 tsp. baking powder
1 c. skim milk
1 egg, slightly beaten or substitute
1 tsp. corn oil
1 ripe banana, mashed
Preparation

Combine flour and baking powder.
Add milk.
Stir in egg and oil.
Stir in mashed banana.
Pour batter by heaping tablespoonfuls onto a hot nonstick griddle.
When brown on one side, turn and brown other side.
Serve at once.
Makes 4 servings.
